A History of Maldon Salt Harvesting Salt from the sea since 1882We hope you paid attention to geography at school. If so, you’ll appreciate the whys and wherefores of a product born from time, place and tide. There are good reasons why Maldon Salt is in Maldon. Flat tide-washed marshes and low rainfall mean high salinity and the ideal place to start the Maldon Salt Company in 1882. There was something special about this salt from the beginning: sold in Harrods and Fortnums within a few years, first exported (to Sweden, land of salt connoisseurs) in the middle of the last century, recommended by St Delia in 2000, and granted the Royal Warrant on its 130th birthday in 2012. Where once there were three salt pans at Maldon Salt, now there are 19. The company has not only survived - unique among its local competitors - it thrives. |
Making salt for four generations
The Osborne’s have been making salt at Maldon for four generations. That’s a long while and a lot of salt for a family both custodians of an ancient culinary tradition and creators of a brand recognised the world over. It is unchanging yet ever-changing, constant yet continuously challenging. The salt stays the same, but there are always new cooks to bring in to the Maldon fold, new recipes that will benefit from the magic of the perfect pinch. On this the Osborne’s thrive. Steven today, his father Clive before him, Cyril in 1934 and great-grandfather James before that. They would laugh if you called them a salt dynasty, but few other families have had such a profound and positive effect on the nation’s taste buds for so long.

How Maldon Salt is Made You could contend that Maldon Salt is really made by nature, with just a little helping hand from man to release it from the clutches of the environment. Certainly the ‘process’, if you can call it that, is about as natural as these things can be. Seawater is filtered and boiled which, reassuringly, removes any impurities, and then heated until the salt crystallises. If this sounds easy, there’s an art in temperature and timing and in particular, the traditional ‘drawing’ of the salt by hand from the pans, that confounds anyone without a saltmaker’s skills. The result, for those with the know-how is the pure white crisp clean crystals that can only be Maldon salt. |

Lavender Salt
Ingredients
Because salt is a mineral, it has no volatile oils and flavour compounds to combine with other ingredients. You cannot, therefore, make a truly flavoured salt by ‘infusing’ it with another ingredient; lavender salt cannot be made by burying a few lavender sprigs in a jar of salt. Celery salt, for example, is made by grinding dried celery seeds with salt, and this is the method to use if you want lavender salt. Use one part English lavender flowers to about ten parts Maldon salt. The flowers need to be absolutely dry otherwise they will cake with the salt. Grind them together in a mortar, or use a clean coffee grinder. |
